Billecart-Salmon Champagne Brunch comes to Rancho Valencia
The event leads with a reception featuring pink lady profiterole with applejack powder, Brut Reserve, and the opportunity to meet and greet with Billecart-Salmon's Director of Champagne Geoffrey Loisel. Brunch follows with a delectable four-course menu from Chef de Cuisine Josh Holt — including gravlax and osetra flatbread and strawberry toast with grilled brioche, pistachio butter, chino strawberries, and house cultured butter — with Demi-Sec, Brut Rose, Blanc de Blancs Grand Cru, and 2002 Cuvee Nicolas Francois Grand Cru champagne pairings.
