Five-Course Tequila Ocho Dinner at Farmer & The Seahorse
Farmer & The Seahorse heads south of the border for an unforgettable journey highlighting Tequila Ocho on Friday, July 28 at 6:30 p.m. The pairing dinner is curated by Chris Simmons, Certified Catador and the Director of Food and Beverage at Farmer & The Seahorse, who previously helmed the All Agave Club at the prestigious Rancho Valencia Resort and Spa, as well as the popular “Catador’s Corner” tastings and tequila dinners at The Patio on Goldfinch, where he was GM prior to his current role. On hand for the event will be the owner of Tequila Ocho, Tomas Estes, to guide guests through the tasting of the single estate agave-based spirits. Tequila Ocho is one of the few tequilas still made slowly and from various regions within Jalisco, Mexico. Each batch comes from a different field or rancho contributing distinctive characteristics of that place.
The agave spirits will be paired with five courses prepared by Chef de Cuisine Jason Gethin and will include: Wood Fired Spanish Octopuswith Linguica, brown butter potato, chimichurri and baby sorrel paired with Tequila Ocho Blanco; Quail and Heirloom Beans with plantain caramel, jalapeño caviar and tomatillo serrano powder paired with Tequila Ocho Reposado; Tempura Baja Oyster with smoked watermelon, sea grass foam, sea beans and smoked salt paired with Tequila Ocho Blanco; Pressed Suckling Pig with sunchoke puree, roasted jus, Brussels leaves and spring onion paired with Tequila Ocho Añejo; and Chocolate and Caramel Mousse with caramel glass, chocolate dirt, raspberry and tuile paired with Tequila Ocho Extra Añejo.
