- 3 cloves garlic, smashed and roughly chopped
- ⅓ cup olive oil
- 12 Roma (or plum tomatoes) cored and cut into medium sized cubes
- Salt and black pepper to taste
Heat oil in a sauté pan over medium heat. Add the garlic and cook until fragrant. Add the tomatoes, salt, and pepper and cover. Cook until the tomatoes begin to soften, about 8 minutes.
Season with salt and pepper.
