Ingredients for

Blood Orange and Purple Brussels Sprout Salad with Date Vinaigrette

FOR THE DRESSING (MAKES EXTRA)

2 teaspoons whole grain mustard

1 lemon, zest and juice

1 tablespoon date syrup or raw honey

1/3 cup extra-virgin olive oil

1 garlic clove, minced or grated

Salt and black pepper to taste

FOR THE SALAD

2 blood oranges, skin removed, cut into 1/4" slices

2 cups purple Brussels sprouts, shredded or leaves separated

6 Medjool dates, pits removed, chopped

Parmesan cheese for shaving on top

Make the dressing

Add all ingredients to a medium mixing bowl and whisk to combine. Season to taste with salt and pepper.

Assemble the salad

On a large serving platter layer blood oranges, Brussels sprouts, and dates.
