Chili-Chocolate Avocado Pudding

What I love about avocados is how versatile they are in the kitchen. Yes they’re great for toast, salads and guacamole, but I encourage you to get more creative with these green fruits. I especially like this recipe because it is an awesome way to use avocados that are bruised or slightly over-ripe and the texture is silky-smooth.

Ingredients for

Chili-Chocolate Avocado Pudding

SERVES 2

1 large ripe avocado

4 tablespoons cocoa powder

2 tablespoons maple syrup (or any liquid sweetener)

2 tablespoons almond milk (or any non-dairy milk)

1 teaspoon vanilla

2 teaspoons cinnamon

½ tsp chili powder

¼ teaspoon salt

Optional toppings: fresh berries, mint, chocolate shavings, coconut whipped cream

Instructions for

Chili-Chocolate Avocado Pudding

Add all ingredients to a food processor or high-powered blender and blend until completely smooth. Taste and adjust seasonings and sweetness to liking before serving with your favorite toppings. You can also leave the chili powder and cinnamon out for a more traditional chocolate pudding flavor.
